Jerk chicken

Marinate ten chicken quarters or legs for four hours in the following marinade:

3 tablespoons Olive oil

1 -3 chilli peppers chopped – Scotch bonnet with seeds for more heat or without for less heat

2 tablespoons dried Thyme

Half a tablespoon of sugar or molasses

1 tablespoon of all-spice ground

1 tablespoon of ground nutmeg

1 tablespoon of freshly chopped cinnamon

1 tablespoon of ground nutmeg

1 tablespoon of Mace

Half a tablespoon of freshly ground black pepper

1 tablespoon of wine or cider vinegar

150 ml of freshly squeezed lime juice

 

  1. Blend all ingredients in a blender or chop thoroughly spread liberally over the chicken cover and leave in fridge for four hours.
  2. Barbecue or bake in the Oven gas mark 6 or 200 degrees for 1 1/2 hours.

Serve with boiled Rice; Rice and peas and salad.
